Comfort Cookies

Oh, what's better than cookies? Well, nothing.

I'm home again on a Friday night with the urge to nest and a soul that needs some baked treats. I went to the store around 4:30 after work and got as many ingredients as I needed for peanut butter, chocolate chip and oatmeal cookies. Alas, I forgot the flour - something no one realizes until one's arms are elbow deep in creamed butter and sugar. I had enough to only make one batch of cookies, so I went for oatmeal with chocolate chips in them. I love compromise.

Oatmeal Chocolate Chip Cookies
1 cup brown sugar*
1 stick butter - 1/2 a cup
1 egg
1ts. vanilla
1 tbsp. milk
1 1/4 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup rolled oats
1 cup chocolate chips

Pre-heat over to 350 degrees. First, mix all the dry ingredients in a bowl and put to the side. No, chocolate chips are not dry. Cream the butter with brown sugar until the mixture has nice peaks. The next ingredients, add in one a time with some space inbetween additions: the egg, vanilla and milk. Put in the dry ingredients a spoonful at a time. After those are in, turn the mixer off and fold in the chips.

I have a handy cookie scooper - like a mini ice cream scoop - that I got at New Seasons Market that I use. Before that I did it the old-fashioned way; two tableware spoons and some interesting handiwork. Anyway, line your cookie sheets with parchment paper (avoids icky sprays and its the original no stick liner) and place a decent size cookie on the sheet. Put the cookies in the oven and bake for 15 minutes. Perfect cookies, I tell you.

Karol - I accidentally happened upon this recipe, and I wanted to quickly thank you for it (tell you I hate you for it-LOL) and let you know that I posted it on my recipe page, it is the BOMB! I doubled the batch and think I almost all of them myself in less than 24 hours. If I knew you...I'd disown you because of this. :) Thanks again, they're the best I've ever eaten.
